Katie's Chocolate Bar

I haven't bought a candy bar in years and probably due to the following reasons: candy bars are loaded in saturated fats, high sugars, and other additives that are probably not so good for the waistline. With that said, I was bond and determine to create a candy bar that would satisfy my sweet-tooth craving with out sacrificing my fitness goals. This is probably my favorite desserts.

Ingredients:

  • 1/3 cup Organic Coconut Oil
  • 1/4 cup Crunchy Smart Balance Peanut Butter
  • 1 cup almond milk or milk of choice
  • 2 tablespoon Dark Hershey Cocoa Powder
  • 2 tablespoons Hershey Cocoa Powder
  • 6 tablespoons of Ideal Sugar
  • 2 tablespoons Plum Amazing
  • 1 cup Original Fiber One cereal
  • walnuts/almonds (optional)


Directions: In a saucepan, add the coconut oil, peanut butter, cocoa, milk, sugar, and the diced plums. On low-medium heat, whisk all the ingredients until there are no clumps. Continue to whisk the mixture until it thickens. If you don't stir constantly, it will burn on the bottom.  Turn off the heat and let the chocolate simmer for a few minutes. Add the Fiber One Cereal and nuts to the mixture and pour it into a mold. Place the mold in the Freezer for couple hours or until it is completely firm. Pop the Chocolate out of the mold and store in a freezer bag.  

Tips: My husband and I store it in the freezer; I think it taste better cold. At room temperature, the chocolate is more like fudge.

Mocha Latte Pops

 My husband absolutely loves these. I was kind of surprised because he never likes coffee to be mixed with any thing. These popsicles are nonfat, light in sugars, and satisfy those sweet cravings with out all the guilt. 

Ingredients:
  • 1 cup of plain nonfat greek yogurt (FAGE)
  • 1 cup of milk (Carnation Fat Free Evaporated Milk- you want it to be creamy)
  • 1 tsp of coffee extracts
  • 3 tablespoons of Ideal Sugar
  • 2 tablespoons of Hersey Cocoa Powder 

Directions: Mix all the ingredients in a food processor or blender.  Then pour into popsicle molds and freeze. If you want a creamy rich flavor, you could add 2 tablespoons of creamer or full-fat coconut milk for an added treat.

Protein Angel Food Cake

Memorial Weekend....

Here is to BBQ's and a weekend at the lake. Even though this is the time of celebration and greasy food, your diet does not need to sacrifice the taste of healthy food. This cake probably has the best flavor with the use of a few clean ingredients.

Ingredients

  • 18 egg whites
  • 2 teaspoon cream tartar
  • 1 cup Ideal sugar ( powdered sugar substitute)
  • 1 teaspoon vanilla
  • 1 cup of unflavored protein powder
  • Pam Spray

Directions:
Add the egg whites, cream tartar, sugar, vanilla, protein. Blend all the ingredients using a electric beater. Spray the cake pan and pour the mixture in the pan. Bake for at 350 for 30 to 45 minutes. Place a toothpick in the middle of the cake. If it comes out clean, the cake is fully cooked. Allow to cool and serve with berries.

Peanut Butter Pro-Balls


Ingredients:

  • 1 cup of oats
  • 1/2 of Peanut Butter (Smart Balance Crunchy)
  • 4 tablespoons of Ideal Sugar (stevia)
  • 2 tablespoons unsweetened almond milk
  • 4 tablespoons unflavored protein powder
  • 2 tablespoons of chocolate chips (dark) 

Direction;
Combine the oats, sugar, protein powder in a medium size bowl. Melt the peanut butter in a bowl and add it to the mixture along with the almond milk. Lastly, add the chocolate chips to the dough.

Roll the dough into balls. Depending on the size, the recipe yields 12. That is....if you don't eat it before then. So...good!

Pro-Cookie Bars


Ingredients
5 oz of dates*
8 tablespoons unsweetened almond milk
5 tablespoons all natural almond butter
1 scoop protein powder (unflavored 81% whey)
1 teaspoon of vanilla
1/4 cup of dark chocolate chips

Blend all ingredients in a food processor or blender. Scoop out the mixture on to a sprayed small pyrex pan. Refrigerate for an hour or perhaps freeze.


*You could substitute dates for prunes. However, prunes are way sweeter and have higher calories. Both have a great amount of nutrients and minerals.

No Guilt Frozen Yogurt

Ingredients:
4 cups of FAGE 0% yogurt
1/2 cup Ideal Sugar
1 1/2 teaspoon of vanilla

*Add chunks of fresh strawberries

Directions:
Combine yogurt, sugar, and vanilla in a bowl. Place in the freezer for one hour. Next, scoop the yogurt mixture in an ice maker for 10-15 minutes. 



Chocolate Joy

Healthy twist on an Almond Joy














Ingredients:

  • 1/2 cup of organic coconut oil
  • 2 tablespoons of Hershey Dark Cocoa
  • 2 tablespoons of Hershey Cocoa powder
  • 4 tablespoons of Ideal Sugar
  • 2 tablespoon no stir almond butter
  • 2 tablespoon of dates
  • 1/3 cup of almonds
  • 1/2 cup all natural unsweetened coconut flakes
  • 1 cup of milk (almond milk, 1% etc.)
  • 3 scoops of unflavored protein powder

On medium heat, add the coconut oil and the rest of the ingredients in a saucepan. Continue to stir until thickens. Should take about 5-8 minutes.  Turn off heat and allow to cool for a minute. Then transfer the chocolate into a mold (make sure to spray the mold with pam spray) or place the chocolate on foil (like you would for cookies).

Place the chocolate in the fridge until hardens, bag it up, and freeze it.

It taste way...better when it is cold.

PB's Tri-cookies

Ingredients:

  • 1 cup of all natural peanut butter
  • 1 cup of Ideal Sugar (any sugar substitute)
  • 1 egg (or substitute 2 egg whites)

Mix all ingredients together, roll into ball, and place on a greased cookie sheet. Bake at 350 for 8 minutes.


These are by far the moist pb cookies I have ever had!

Katie's Healthy Cheesecake



Katie's Cheesecake

Place these ingredients in Springform pan:
3/4 to 1 cup(s) (Fat -free) graham cracker crumbs (crust)
• 3 tablespoon(s) of coconut oil (crust)

Mix the following Incredients:
• 3 package(s) (8-ounce) nonfat cream cheese
• 1 cup(s) ideal sugar (or any other sugar substitute)
• 1 tablespoon (vanilla sugar free pudding packet)
• 1 1/2 pint(s) nonfat greek yougurt (Fage)
• 1 1/4 teaspoon(s) vanilla extract
• 2 large eggs
• 2 large egg whites

Place in 9 inch pan
bake at 325 for 1hour


PB's Muscle Brownies



Recipe

Ingredients

4 egg whites
4 scoops protein powder (Chocolate or unflavored)
1/2 cup unsweeted applesauce
1/4 cup dark cocoa powder
1/4 cup regular cocoa powder
1 cup Ideal Sugar (Splenda....)
1 cup oat flour


Mix all ingredients. Spray the large cake pan with Pam spray, and pour the mix. Drizzle a tablespoon of  melted all natural peanut butter.  Bake 350 for 20-30minutes.

Makes 16 bars
